Ingredients:
• 1 cup fresh Moringa leaves (you can also use dried Moringa powder)
• 2 cloves garlic
• 1/2 cup grated Parmesan cheese
• 1/4 cup pine nuts or walnuts
• 1/2 cup extra virgin olive oil
• Salt and pepper to taste
• Juice of 1 lemon
Instructions:
1. Wash the Moringa leaves thoroughly and remove the stems.
2. In a food processor, combine the Moringa leaves, garlic, Parmesan cheese, and pine nuts (or walnuts). Pulse until the ingredients are finely chopped.
3. With the food processor running, slowly drizzle in the olive oil until the mixture becomes smooth and well combined.
4. Add salt, pepper, and lemon juice to taste. Pulse again to blend everything evenly.
5. Taste the pesto and adjust the seasoning if needed.
6. Serve the Moringa pesto over pasta, as a spread on bread, or as a dip for vegetables. Enjoy!
